Veggie Omelette

🥚 Veggie Omelette Recipe

Ingredients:

  • 3 large eggs

  • 2 tbsp milk (optional, for fluffiness)

  • Salt and pepper to taste

  • 1 tbsp olive oil or butter

  • ¼ cup diced bell peppers (any color)

  • ¼ cup chopped onions

  • ¼ cup chopped mushrooms

  • ¼ cup chopped spinach or kale

  • ¼ cup shredded cheese (optional, cheddar or feta work great)

  • Optional: diced tomatoes, zucchini, or herbs like parsley or chives

Instructions:

  1. Prepare the eggs: In a bowl, whisk eggs with milk (if using), salt, and pepper.

  2. Cook veggies: In a non-stick pan over medium heat, add oil. Sauté onions, bell peppers, and mushrooms for 3–4 minutes until softened. Add spinach and cook for another minute until wilted. Remove from pan and set aside.

  3. Cook the omelette: Reduce heat to medium-low. Pour the egg mixture into the pan. Tilt to spread evenly.

  4. Add fillings: When the eggs begin to set (but top is still slightly runny), add the sautéed veggies and cheese over half of the omelette.

  5. Fold & finish: Carefully fold the omelette in half. Cook for 1–2 more minutes until cheese melts and eggs are fully set.

  6. Serve: Slide onto a plate, garnish with herbs or hot sauce if desired, and enjoy!
